DRESSING DOWN

Some named salads, coming at you (main / specific ingredients listed only):

1 Rossini salad – truffles, mustard (now used for various salads with mustard dressing)
2 Cobb salad – chicken, avocado, bacon, eggs, cheddar
3 Louis salad – crab, eggs, paprika dressing, sometimes asparagus
4 Favourite salad – crayfish, truffles, asparagus, celery
5 Russian salad – peas, carrots, pickles, mayonnaise (properly served chilled)
6 Mikado salad – potatoes, shrimps, mayonnaise, soy sauce
7 Rachel salad - celery, artichoke, potatoes
8 Waldorf salad – apple, celery, walnuts
9 Port-Royal salad – potatoes, string beans, apples
10 Maharajah salad – spiced rice, crab meat
11 Reuben salad – swiss cheese, sauerkraut, corned beef, croutons, sometimes eggs
12 Greek salad – red onion, feta cheese, olives
13 Bagration salad - artichoke, celeriac, pasta
14 Raphael salad – cucumber, radish, asparagus tips, paprika mayonnaise
15 Cajun salad – shrimp, pinto beans, corn
16 Albignac salad – chicken, crayfish, egg, truffles, celeriac
17 Reine Pédauque salad – lettuce, cream dressing, cherries
18 Caesar salad – romaine lettuce, croutons, Parmesan; originally lightly coddled egg

20 Niçoise salad – properly potatoes, string beans with anchovies, olives and capers; now usually has boiled eggs and often tuna
